cilantro hummus
i have a new toy! one of the things on our registry was a ninja mixer/blender/ice crusher/all around awesomeness maker, and we got one!! it has finally arrived in seattle after mom shipping it and many other things out to us, and have become instantly obsessed! i have been making juices, smoothies and hummus galore, including this yummy concoction that was inspired by a cilantro hummus our cafeteria at school makes/sells. my friend danielle has been asking me to make a cilantro hummus now for a few weeks, and i finally got around to it last night.
to say the least, the result was amazeballs! two cans of chickpeas makes a nice big batch of hummus to last us all week if not longer, and is far yummier than anything i could buy in a store
i wanted to share the recipe with all of you so that you too can whip up a batch of hummus at home in less than 10 minutes! instead of cilantro, you could make basic hummus, or throw roasted red peppers in to give the classic a new twist!
makes roughly 2 cups
2 cans garbanzo beans, drained and rinsed well
1 bunch cilantro
3 cloves garlic
1/3 cup tahini
2 T olive oil
1/2 cup water
1 t cayenne pepper
1 T cumin
salt to taste
put all ingredients into a food processor of blender and blend until smooth. add additional water if necessary to help make the hummus smoother – sometimes you have to play around with this a bit. i’m not a fan of chunky hummus so i generally add water LITTLY-BY-LITTLE after the initial 1/2 cup until i obtain my desired consistency.







Awesome hummus variation! I’ve been really enjoying swapping roasted beets for half the chickpeas in my hummus also. It makes for some eye-popping color in addition to the great taste.
