world nutella day!!!!!
okay so, there is a world nutella day! oh-my-gawh!! i’m in love! this incredible day is looked after by two bloggers who have developed an outlet for nutella fanatics to express their love and affection for the hazelnut, chocolatly spread! i must thank both of these incredible women from the bottom of my nutella heart for this fantabulous day, so THANK YOU Ms. Adventures in Italy and Bleeding Espresso!!!
i took the opportunity to develop a recipe for my friend ashley, who is a fitness competitor. she isn’t training right now, but is still eating clean and asked me to come up with something with oats and nutella for her… et voila! next thing i knew, i was making these granola bars! the most fun part was trying to decide how to incorporate the nutella into the recipe since there aren’t any actual nutella “chips” (although someone needs to make that happen, and soon!). i was also trying to figure out what flavors would go well with the nutella, and so i decided to go with pistachios for a little something different and dried figs instead of the same-old raisins or dried cranberries.
i decided to melt the nutella into the honey, butter and sugar so that it would become an integral flavor in the bars once they were cooked, and i think they came out quite well! the result is a yummy, nutella-y, healthy snack time favorite! HAPPY NUTELLA DAY EVERYONE!! what’s your favorite nutella dish??
2 cups old fashioned oats
1/2 cup chopped dry figs
1/2 cup pistachios
1/4 t all spice
6 T butter
1/3 cup packed brown sugar
3 T honey
1 T nutella
preheat oven to 350. line a baking pan with tin foil so that the foil hangs off the sides of the pan (it will help you get it out of the pan more easily later). drizzle some olive oil in the foil and use a paper towel to wipe the oil over the foil.
mix all the dry ingredients together and set aside.
melt together the butter, sugar, honey and nutella over medium low heat. when the mixture is completely melted and thoroughly mixed together, add it to the bowl with the dry ingredients and mix well until everything is fully incorporated.
cook in the oven, uncovered for about 30 minutes, and until the granola is golden brown. when golden-y brown, let it cool, then cut into desired sized pieces and enjoy!
