brownies plus… surprise, an oreo to boot!

tomas brought me home a bunch of bob’s red mill mixes a few weeks ago and i finally got around to making the brownies tonight.  i have always believed that if the batter doesn’t taste good (no matter what you’re baking), the final product won’t taste good either.  just to give you an idea of how yummy these brownies are… there were no remnants of batter on the spatula when i was done with it!

to give these brownies a little twist, i hid a gluten free “oreo” into each brownie!  i wanted to add some peppermint extract to add yet another twist and quench my girl scout cookie fix after eyeing them outside of every grocery store i’ve entered lately, but alas, i didn’t have any.  no worries though, these brownies didn’t suffer from the lack of minty freshness – they were deliciously chocolatey, and i loved the surprise “oreo” in the center!

i highly recommend bob’s red mill gluten free brownie mix if you need to get a chocolate fix and fast!  add any flavors or surprise ingredients like nuts, chocolate chips, cookie dough, etc… let your imagination run wild!  just make sure to use gluten free “oreos” if you follow this particular version – i accidentally used some with gluten in them so now it will be left up to tomas to finish them off!  i did of course eat one brownie before i figured out my mistake, and will hopefully not pay too badly for my mistake!

makes 15 brownie cups

1 bag bob’s red mill gluten free brownie mix

1 egg

1 1/2 sticks melted butter

1 t vanilla extract

3/4 cup warm water (110 degrees)

15 oreos

preheat oven to 350 and grease a cup cake pan.  mix together the mix and butter, adding the egg and vanilla extract until it comes together.  add in the water and mix until mixed well.

drop a large spoonful of batter into one of the cupcake rounds, place an oreo on top, then top off with another large spoonful of batter.  repeat until you use up all the batter.

cook for 20-25 minutes, or until a knife comes out clean.
