pasta with arugula pesto

i love pestos… they’re so fresh, so easy to make, and you can make them out of just about anything your little heart desires!  instead of the classic basil pesto, i decided to get a good dose of green leafies with my pasta today and use arugula, a boisterous little leaf with a peppery kick.

when i say these are easy to make, it literally took me MAYBE five minutes to make this pesto… the longest part of the recipe was waiting for the pasta to boil.  pestos maid with arugula or spinach as opposed to basil will not turn brown like basil pesto either, which makes them great to keep around without looking like you’re eating dirt after a few hours.

with just a few ingredients and a food processor, you can have a healthy, fresh dinner on the table in less than 20 minutes!  i had this pasta for dinner and actually threw in some lamb & basil sausage fo a little extra protein.  you could throw in chicken, salmon, shrimp, tofu, or just leave it is is since it’s gloriously tasty all on its own!

 

makes 1 bowl

1 cup dried gluten free pasta of your liking

1 1/2 cups fresh arugula

1/4 cup parmesan shavings

1 clove garlic

1/8 cup pine nuts

1/8 cup olive oil

s&p

prepare the pasta according to the box’s instructions.

toss the remaining ingredients into a food processor and puree until the mixture is as smooth or as chunky as you would like it to be.

toss the cooked pasta with the pesto, top with a few pine nuts or parmesan and mangía!

    If I liked pesto, I’d totally try this, but I wanted to say that I think your photography on this one is really good, Sara.
