spring radish & cucumber salad
the weather this past weekend in seattle was, simply put, gorgeous! the sun was out all weekend, and i think it may even stick around for one or two more days, believe it or not! We had a few friends drive up from tacoma on friday night and then had a cookout for most of the day saturday. it was one of those, cook, eat and drink all day kind of deals – my favorite really. we had music playing, the dogs were busy working on some bone marrow, and the company was entertaining to say the least!
while tomas and matt were in charge of getting the meat (not always the smartest ideas – they came home with filet, hanger steak, 2 or 3 types of sausages, lamb, shrimp and chicken), and megan and i were in charge of the sides. we went to a little market on 65th and 15th that just opened up a new space across the street from their old space – they have great, cheap produce (my favorite kind!). we also came home with an abundance of items – radishes, cucumber, avocado, tomatillos, jalapenos, garlic, onion, fingerling potatoes, asparagus, cilantro and broccoli.
i decided to try and throw together a little radish salad, and luckily it was a huge hit! when tomas comments that something is awesome, i take it as an enormous compliment – this salad earned that title! it is light, fresh and flavorful – perfect for spring! i hope you enjoy it as much as we did!
2 bunches radishes, thinly sliced
1 cucumber, cut in half lengthwise, seeded and sliced thinly
2 medium sized tomatoes, seeded and diced
3 scallions, sliced on a bias
1 avocado, diced
juice of 1 lime
1/4 cup chopped cilantro
1 T fresh thyme
1 t apple cider vinegar
1 T olive oil
toss all ingredients together and season to taste (yes, it’s that easy!).
