cinco de mayo fun!
i can not even believe that it is almost may, seriously where has the time gone this year??!! april especially has absolutely flown by me, i feel like i’ve been playing catch up all month! whether or not i like it however (father time apparently doesn’t feel generous enough to grant me a few extra hours in the day), may is
right around the corner here! one BIG plus with the dawning of may of course is cinco de mayo! in america this of course means margaritas, coronas, mexican food and, let’s admit it, an excuse to party like rock stars!
i’ve made a little list of a few scrumptious looking dishes to give you some ideas for any fiesta planning that may be going on, and have thrown in my guacamole recipe as well! now you know how boys tend to ask stupid questions? tomas is no exception i’m afraid (love you babe!!)… one such question he asked a few months ago when we were grilling in the yard together and had a few avocados laying around that i wanted to turn into some yummy guac was, “do you even know how to make guacamole?” really?!?! was my reply of course. i knew that if i were going to make guacamole after that however, that it had to be good, or else i would never live it down and he would never trust me to make guac again (you know it’s true babe!). i’m proud to say (and not surprised of course) that my guacamole recipe was quite a hit and he had soon demolished the whole bowl – 1 point for team sara!

heathy mexican sweet potato skins from pinch of yum

mexican style slaw – jicama, cilantro & lime from stylish cuisine
veggie enchiladas from prevention RD
makes 1 medium sized bowl
1/4 red onion, diced
1 tomato, seeding and diced
1/4 cup chopped cilantro
juice of 1 lime
1/8 cup diced red peppers
1 dash cayenne pepper
1 cap full apple cider vinegar
salt to taste
simply mash everything together, make sure to have some tortilla chips on hand, and watch how it disappears before your eyes!
