summer fruit with balsamic reduction & basil
for those of you who know me well, i’m sure you’ll be surprised to see this entry given that it is all about fruit. for those of you who don’t yet know me very well, i don’t really eat fruit (minus apples, and probably any vegetable that botanically may be considered a fruit because of its seeds, ie, tomatoes). tomas on the other hand, is a huge fan of fruit. i have learned that if there is fruit for him here, he won’t nibble on something else!
and for those who have had to gluten free at some point in your life, you know that desserts aren’t always the easiest meal to prepare without gluten sneaking in at some point. this dessert solves that dilemma quite easily! all you have to do is reduce some balsamic vinegar with a little sugar until it has a syrup-y quality, and drizzle this over whatever fruit you choose. add a little basil, thyme or mint and a pinch of good sea salt to bring all the flavors out, et voila, a great gluten free dessert! if you’re feeling really naughty, you could top this is some home made whipped cream as well 😉
makes 2 servings
1/4 cup quartered grape tomatoes
3 strawberries sliced
1/4-1/3 cup chunked watermelon
1 T basil, chiffonade
pinch good sea salt
balsamic reduction (this also goes great with a caprese salad or with good olive oil and some nice bread – gluten free of course!)
1/2 cup balsamic vinegar
1 t raw sugar
to make the reduction, place the vinegar in a small pan over high heat and let it come to a boil. add in the sugar and whisk often so the sugar dissolves and to help prevent burning. the vinegar should reduce by about half and take on a “light syrup” like quality.
toss the fruit, basil and salt together well. divide the fruit into two small bowls and then drizzle the balsamic reduction over top and enjoy!
